Baked Potato Puffs
Yield: 1½ dozen
- 4 cups - Cooked mashed potatoes
- 1/4 cup - Butter or margarine, melted
- 2 - Egg yolks
- 1/2 teaspoon - Salt
- 1/8 teaspoon - Dry mustard
- 1/4 teaspoon - Pepper
- 1 - Egg, beaten
Combine potatoes, butter or margarine, egg yolks, salt, dry mustard & pepper.
Beat on medium speed of an electric mixer until smooth.
Shape mixture into 2 inch balls.
Flatten balls to ½" thickness and place on a lightly greased baking sheet.
Brush surface of each potato ball with egg.
Bake at 400° for 12 minutes or until browned.
