Irish Mashed Potatoes (Colcannon)
Heat 1/2" water to boiling.
- 2 cups - Green cabbage, shredded
- 2 cups - Mashed potatoes
- 1/4 cup - Green onions, sliced
- 1/8 teaspoon - Black pepper
- Butter or margarine
Stir in cabbage, cover and heat to boiling.
Cook 5 minutes, drain.
Prepare mashed potatoes, fold in cabbage, onions & pepper.
Dot with butter, sprinkle with parsley.
