Dutch Potato Pancakes
Peel potatoes, let stand in cold water, grate & drain well.
- 3 pounds - Potatoes
- 3 - Eggs, separated
- 1¼ cups - Flour, sifted
- ½ teaspoon - Salt
- 1 tart - Apple, peeled & grated
- 1 teaspoon - Onion, grated
Add beaten egg yolks, flour, salt, apple & onion.
Fold in stiffly beaten egg whites.
Pour a small amount onto a hot greased griddle to make thin pancakes.
Brown on both sides.
Serve with applesauce.
