Serves 8 to 10
- 4 - Red potatoes, large
- 1 stick - Margarine or butter
- 1 - Bell pepper, small
- 1 tablespoon - Flour
- 1 small jar - Pimento
- ½ cup - Condensed milk
- ½ cup - Milk
- Salt & pepper
- ½ roll - Garlic cheese, 8 ounces
- ½ roll - Jalapeno cheese, 8 ounces
Boil potatoes in skins until done.
When cool, peel & slice into thin slices.
While potatoes are cooking, saute pimento & bell pepper in small amount of margarine.
Make a white sauce of milks, margarine & flour.
Melt cheeses in white sauce (the microwave works well for this).
Mix all ingredients except potatoes in the sauce.
Arrange the potatoes in layers in baking dish pouring sauce between layers & over top.
Bake at 350° for 30 minutes or until bubbly.
