2 tablespoons oil
1 or 2 pounds grated potatoes
1/2 cup diced onion
1/2 cup diced green pepper
3/4 or 1 cup diced tomatoes
3/4 or 1 cup diced Ham
1 cup Brown Gravy (French's)
(all of these ingredients are optional or amounts should be to your taste)
Fry the potatoes in the oil like Hash Browns until about half done
Add the onion and green pepper and Ham cook until everything is done and warm to your liking.
Add the tomatoes then place the velveeta slices around in spots.
Turn the Heat to low and cover let stand until cheese has melted.
Once you place this mixture on your plate put some gravy on top.
The gravy should be started about half way through the browning of the potatoes. I like the French's Brown Gravy but use whatever kind you like.
This is a very solid meal and can be supplimented with cold toast or better yet Bisquick Biscuits.
