Sheila's "No-Cheese-Here" Scalloped Potatoes
2 Lbs - Potatoes (about 6 medium), sliced thinly
3 Tbls - Margarine
3 Tbls - Flour
1 tsp - Salt
¼ tsp - Pepper
2½ cups - Milk
¼ cup - Onion, chopped
1 Tbls - Margarine
Melt 3 tablespoons margarine in saucepan over low heat.
Blend in flour, salt and pepper.
Cook over low heat, stirring constantly until smooth and bubbly.
Stir in milk and heat until boils.
Arrange potatoes in greased 2 quart casserole in 3 layers, topping each of the layers 1/2 the onion and 1/3 of the white sauce.
Dot with remaining margarine.
Cook, covered at 325 degrees for 40 minutes then uncover and cook until tender for 60 to 70 minutes longer.
