Herb-Roasted Dijon Potatoes
- 6 medium - Red-skin potatoes (2 pounds)
- 5 tablespoons - Dijon mustard
- 2 tablespoons - Olive oil
- 1 clove - Garlic, chopped
- 1/2 teaspoon - Italian seasoning
Cut potatoes in chunks and place in lightly greased 13x9 baking pan or dish.
Mix remaining ingredients in small bowl and toss with potatoes.
Bake at 425 degrees for 35 to 40 minutes or until tender, stirring occasionally.
