Irish Potato Cake


1 cup - Mashed potatoes
1/2 cup - Butter
4 - Eggs
2 cups - Sugar
1/2 cup - Milk
1 tsp - Baking powder
2 cups - Flour
1 tsp - Baking soda
1 tsp - Vanilla
1/2 cup - Coconut, shredded
1 cup - Nuts, chopped

Irish Potato Cake Icing *

1 cup - Condensed milk
1 cup -Sugar
1 cup -Coconut, shredded
1 tsp - Vanilla
1 cup - Nuts, chopped
3 - Egg yolks
1/2 cup - Butter

Prepare mashed potatoes.
Cream butter, eggs, sugar and milk.
Add to mashed potatoes.
Sift dry ingredients.
Add to potato mixture.
Beat until smooth.
Add coconut, vanilla and nuts.
Mix thoroughly.
Bake in a 350 degrees oven about 35 or 45 minutes.
Frost cake when cool.

*To prepare frosting:

Cook all ingredients until thick and thoroughly mixed.
