Irish Potato Candy
- ¼ cup - Mashed potatoes
- 1 teaspoon - Butter, melted
- 1¾ cups - Powdered sugar, sifted
- 1½ teaspoons - Vanilla
- ½ teaspoon - Almond extract
- Dash of salt
- Few drops - Food coloring
- 1½ cups - Coconut flakes
Mix mashed potatoes & melted butter in bowl.
Add powdered sugar gradually & beat until thoroughly blended.
Add vanilla, almond extract, coloring & salt; blend well.
Add coconut.
Roll candy in small balls & place on waxed paper.
