Kugelis (Grated Potato Pudding)
- 5 pounds - Red potatoes
- 1 large - Onion
- ½ pound - Bacon, diced
- 6 - Eggs, well beaten
- 1 can - Evaporated milk (13 oz)
- Salt & pepper, to taste
- Sour cream
Grate potatoes & onion.
Fry diced bacon until almost crisp.
Pour bacon and fat over potato-onion mixture.
Beat eggs; add to potatoes.
Add milk, salt & pepper; stir well.
Pour into well greased baking dish.
Depth of potato mixture should be no less than 2½ inches in pan.
Bake at 350° for 1½ hours or until crispy brown.
Check center to see if done.
Remove from oven, cover and let stand for 15 to 30 minutes.
Cut into squares.
Serve with sour cream.
