Roasted Greek Potatoes
3 lbs - Baking potatoes, peeled and quartered lengthwise
3 Tbls - Olive oil (a little extra to oil the dish with)
1/4 cup - Lemon juice, freshly squeezed
1 Tbls - Dried oregano
3 - Garlic cloves, finely chopped
Salt and freshly ground black pepper, to taste
1 cup - Water
Preheat oven to 450 degrees.
Place potato quarters in a large oiled baking dish.
Toss potatoes with the remaining ingredients, add 1 cup water, combining well.
Bake, uncovered, for 50 minutes to 1 hour, stirring often.
Add more water to the dish if necessary.
Potatoes should be tender and golden brown when done.
