Rubble Soup (Sopa De Entulho)

Serves 6
3 - Potatoes, small cubes
1 lb - Dry red beans
1 large - Onion
2 - Cloves
2 - Turnips, cubed into ¼ pieces (save the leaves)
3 - Carrots, thinly sliced
3 - Potatoes, small cubes
4 pints - Water
1 small - Pumpkin, large cubes
¼ lb - Unsmoked bacon, chopped
4 tsps - Olive oil
½ head - Cabbage
Wine vinegar
Salt
Piri-Piri sauce and/or Tabasco (optional)

Soak the beans, in water to cover at least 3", for a few hours or overnight; drain and rinse.
Fill a large pan with 4 pints cold water.
Press the cloves into the onion and add to the pan with the drained beans.
Add the bacon.
When the beans are tender add the turnip, the carrots and the pumpkin. Discard the onion.
When the carrots are almost cooked add the potato, peeled and cut into small cubes, the washed
leaves of the turnip broken into medium size pieces by hand, and the leaves of the cabbage
hand-shred into large pieces.
Let everything cook together for a while, until tender.
Place a teaspoon of vinegar in each bowl, and fill with the hot soup.
Add a dash of Piri-Piri sauce, or Tabasco (if desired).
The soup will taste even better if you boil a ham hock with the beans. If there is any meat left in the
bone shred it and add to the soup.
